Tofu Fruit Pudding

Ingredients
  Frozen strawberries 10 Ounce (1 Package, Thawed)
  Tofu 1⁄2 Pound, drained and crumbled
  Honey 2 Tablespoon
  Unsweetened coconut 2 Tablespoon
Directions

Put all the ingredients in the container of an electric blender or food processor and blend or process until smooth.
Chill well before serving.

Use firm silken tofu. If you use the soft silken tofu, it will remain in liquid form. Also, for my fellow Southerners who grew up on very fattening banana pudding, your family will not know you used tofu if you make the pudding mixture from firm silken tofu, turbinado sugar syrup, and 2 tsp of real vanilla flavor. Layer with bananas and low fat vanilla wafers. Chill overnight. Eat in moderation!
