Key Lime Pudding
|Sugar free lime gelatin mix||3 Ounce (1 Package)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Lime juice||1 Teaspoon (Preferably Key Lime Juice)|
|Cold water||1⁄2 Cup (8 tbs)|
|Ice cubes||1⁄2 Cup (8 tbs)|
|Frozen whipped topping||1 3⁄4 Cup (28 tbs)|
Put the gelatin powder into a large mixing bowl.
Add the boiling water and stir until the powder is dissolved.
Add the lime juice.
Put the cold water into a 2 cup (500 mL) measuring cup.
Add ice cubes until the measure is 1 1/4 cup (310 mL) full.
Put the water and ice mixture into a blender or food processor.
Add the gelatin mixture and blend until the ice has almost disappeared.
Add non-dairy topping.
Blend again until mixed.
Pour into 8 serving dishes.
Chill until set, about 1 hour.
