|Pineapple juice||1 Cup (16 tbs) (divided)|
|Envelope of unflavored gelatin||1 (unflavored)|
|Pineapple||1 1⁄2 Cup (24 tbs), crushed (canned unsweetened, well drained)|
|Lemon extract||1⁄2 Teaspoon|
|Yogurt||1 1⁄2 Cup (24 tbs)|
Pour 1/2 cup pineapple juice into a small saucepan, and sprinkle gelatin on top.
Let stand for about 5 minutes to soften.
Warm mixture over low heat, stirring constantly, until gelatin dissolves.
In a large bowl, mix together pineapple, 1/2 cup pineapple juice, honey, if desired, and extract.
Thoroughly stir in gelatin mixture.
Chill until thickened but not set.
Fold in yogurt, and spoon pudding into 6 dessert dishes.
