Pineapple Pudding

Ingredients
  Pineapple juice 1 Cup (16 tbs) (divided)
  Envelope of unflavored gelatin 1 (unflavored)
  Pineapple 1 1⁄2 Cup (24 tbs), crushed (canned unsweetened, well drained)
  Honey 2 Teaspoon
  Lemon extract 1⁄2 Teaspoon
  Yogurt 1 1⁄2 Cup (24 tbs)
Directions

Pour 1/2 cup pineapple juice into a small saucepan, and sprinkle gelatin on top.
Let stand for about 5 minutes to soften.
Warm mixture over low heat, stirring constantly, until gelatin dissolves.
In a large bowl, mix together pineapple, 1/2 cup pineapple juice, honey, if desired, and extract.
Thoroughly stir in gelatin mixture.
Chill until thickened but not set.
Fold in yogurt, and spoon pudding into 6 dessert dishes.
