Baked Rice Pudding
|Brown rice||480 Milliliter, cooked (2 Cups)|
|Rice dream||480 Milliliter (2 Cups, Original Or Vanilla)|
|Cinnamon||1 1⁄2 Teaspoon (8 Milliliter)|
|Whole wheat pastry flour||45 Milliliter (3 Tablespoon)|
|Maple syrup/Rice syrup||60 Milliliter (1/4 Cup)|
|Vanilla extract||1 Teaspoon (5 Milliliter)|
|Almond butter||30 Milliliter (2 Tablespoon)|
|Raisins/Dates||80 Milliliter (1/3 Cup)|
|Roasted almonds||180 Milliliter, slivered (For Topping, 1/3 Cup)|
Preheat oven to 400°F (205°C).
Place rice in a mixing bowl.
Using a wooden spoon, break up any clumps of rice.
In a blender or food processor, blend together Rice Dream, cinnamon, flour, syrup, vanilla and almond butter.
Pour mixture into rice, add raisins and mix well.
Transfer to a baking dish; cover and bake for 45 minutes.
Remove from oven and allow to cool for a few minutes.
