Lemon Delicious Pudding
|Grated lemon rind||1 Teaspoon|
|Lemon juice||2 Tablespoon|
|Melted butter||2 Teaspoon|
|Caster sugar||5 Ounce|
Separate the whites and yolks of the eggs.
Mix ingredients in this order; lemon rind, lemon juice, sugar, flour, beaten egg yolks, milk and butter.
Mix thoroughly and fold in the stiffly beaten egg whites.
Pour into a greased baking dish and cook until set.
The mixture separates into a frothy top and custardy base.
