|Eggs||2 , separated|
|Sugar||1⁄2 Cup (8 tbs)|
|Sherry||3⁄4 Cup (12 tbs)|
|Cold water||1⁄4 Cup (4 tbs)|
|Chocolate||1⁄3 Cup (5.33 tbs), shaved (sweet)|
Mix egg yolks with sugar and sherry in the top of a double boiler.
Cook over simmering water until slightly thickened.
The mixture will boil over hot water because of the low boiling point of sherry.
Soften gelatin in cold water and stir into sherry mixture.
Beat egg whites with salt until stiff, gradually add J cup sugar, and continue beating until mixture is like a meringue.
Fold in the custard mixture and pour into mold.
Unmold on serving dish and sprinkle shaved sweet chocolate over the pudding.
