|Figs||1⁄2 Cup (8 tbs)|

|Citron peel||1⁄4 Cup (4 tbs)|
|Orange peel||1⁄4 Cup (4 tbs)|
|Ground suet||3⁄4 Pound (2 Cup)|
|Day old bread loaf||1⁄4 , plucked fine by hand|
|Salt||1 1⁄2 Teaspoon|
|Scalded milk||1 Cup (16 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs), firmly packed|
|Red wine||2 Tablespoon|
Cut up fruits; add crumbled bread, salt, spices, scalded milk and sugar.
Beat eggs until light and add fruits, suet, wine, brandy, etc.
Steam in pudding dishes, water 2/3 up on puddings for 5 hours.
Reheat in same manner 1 hour only Christmas day.
