Semi Sweet Chocolate Pudding
|Semisweet chocolate pieces||6 Ounce (1 Package)|
|Water||1⁄4 Cup (4 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Whipping cream||1 Cup (16 tbs), chilled|
|Golden brown sugar||2 Tablespoon|
|Sliced almonds||1 Tablespoon|
1. Combine chocolate pieces, water, and 1/2 cup brown sugar in the top of a double boiler. Heat over simmering water until chocolate is melted. Beat until smooth. Cool.
2. Beat egg yolks with vanilla extract. Stir into chocolate mixture. Beat egg whites until stiff. Fold chocolate mixture into egg whites. Spoon into individual serving dishes. Chill 3 hours.
3. Combine whipping cream and 2 tablespoons brown sugar. Whip until stiff. Top pudding with the whipped cream and sprinkle with almonds.
