|Dietetic carbonated beverage||2 Cup (32 tbs), cream flavored|
|Cottage cheese||2⁄3 Cup (10.67 tbs)|
|Apple||1 Medium, peeled, cored and coarsely grated|
|Artificial sweetener||To Taste (To Equal 4 Teaspoons Sugar)|
Place matzo in blender container and blend into fine crumbs.
Add 1 egg, half of the milk and salt and blend until smooth.
Pour small amount of batter into a hot, non-stick skillet, covering entire surface.
Cook until slightly brown on one side, turn and cook 10-15 seconds longer.
Repeat until all of the batter has been used.
Makes 3-4 blintzes.
Cut blintzes into 1/4 inch strips to resemble noodles.
Bring beverage to a boil, add blintz strips and cook for about 2 1/2 minutes.
Combine with cottage cheese and apple, and toss.
Place in small baking dish.
In a bowl, beat remaining egg lightly, and combine with remaining milk and sweetener.
Pour over cheese-and-blintz mixture.
Toss and sprinkle with cinnamon.
Bake at 350Â° F. for about 15-20 minutes or until kugel is firm.
