Lukshen Kugel is a delicious dessert Yiddish delight that you simply can't resist. This Popular Jewish flatbread pudding is a never miss item. Try this Lukshen Kugel. Ingredients
  Matzo board 1 , broken into pieces
  Egg 2
  Skim milk 1⁄2 Cup (8 tbs)
  Salt 1 Dash
  Dietetic carbonated beverage 2 Cup (32 tbs), cream flavored
  Cottage cheese 2⁄3 Cup (10.67 tbs)
  Apple 1 Medium, peeled, cored and coarsely grated
  Artificial sweetener To Taste (To Equal 4 Teaspoons Sugar)
  Cinnamon 1
Directions

Place matzo in blender container and blend into fine crumbs.
Add 1 egg, half of the milk and salt and blend until smooth.
Pour small amount of batter into a hot, non-stick skillet, covering entire surface.
Cook until slightly brown on one side, turn and cook 10-15 seconds longer.
Repeat until all of the batter has been used.
Makes 3-4 blintzes.
Cut blintzes into 1/4 inch strips to resemble noodles.
Bring beverage to a boil, add blintz strips and cook for about 2 1/2 minutes.
Drain.
Combine with cottage cheese and apple, and toss.
Place in small baking dish.
In a bowl, beat remaining egg lightly, and combine with remaining milk and sweetener.
Pour over cheese-and-blintz mixture.
Toss and sprinkle with cinnamon.
Bake at 350° F. for about 15-20 minutes or until kugel is firm.
