Old Fashioned Rice Pudding
|Raw long grain rice||1⁄4 Cup (4 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Seeded raisins||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Grated nutmeg||1⁄4 Teaspoon|
1. Preheat oven to slow (300° F.).
2. Mix the milk, rice, sugar and salt in a six-cup buttered casserole and bake, uncovered, two hours, stirring the mixture every half hour.
3. If the raisins are not soft and fresh, let them stand in water to cover while the pudding bakes. Drain and add to the pudding. Add the vanilla and nutmeg and mix carefully.
4. Bake the pudding without stirring about one-half hour longer, or until the rice is very tender.
