  Eggs 3
  Sugar 1⁄4 Cup (4 tbs)
  Vanilla extract 2 Teaspoon

2. Add as many apples as will fit uncrowded in the saucepan; cover and cook slowly until apples are just tender, about 7 minutes, turning carefully several times to obtain an even color. With a slotted spoon, transfer apples to a 1 1/2 quart baking dish.
3. Combine eggs, the 1/4 cup sugar, and vanilla extract in a bowl; beat just until blended. Gradually add the hot cream, stirring until sugar is dissolved. 4. Bake at 325°F 50 to 60 minutes.
