Mini Eggnog Bread Pudding, Gluten Free

This Gluten Free Eggnog Bread Pudding is easy to make and chock full of holiday flavor. Pop a pecan or two on top of each pudding before baking for an attractive presentation.

Ingredients

White bread slice 3 , cut into cubes for 1 1/2 cups (Schar Artisan)
Egg 1
Eggnog 1/4 Cup (4 tbs) (dairy, almond or coconut
Brown sugar 3 Tablespoon
Gluten free vanilla extract 1/2 Teaspoon
Nutmeg 1/8 Teaspoon
Cinnamon 1/8 Teaspoon
Pecans/Sub raisins 3 Tablespoon , chopped
For sauce: :
Eggnog 3 Tablespoon
Brown sugar 3 Tablespoon

Directions

GETTING READY:

Preheat oven to 325F.

Grease 4 wells of muffin tin.

MAKING:

In a bowl, combine egg, eggnog, vanilla, nutmeg, cinnamon and mix well.

Add bread to bowl and stir well.

Add pecans, stir well and allow to stand for at least 5 minutes.

Divide the batter among 4 muffin wells and pop into oven.

Bake for 20-25 minutes.

In a small bowl, combine eggnog, brown sugar and mix well.

Place over low heat and stir well.

Once the puddings are cooled, drizzle sauce over it.

SERVING:
