Steamed Zucchini Pudding
|Margarine||1 Tablespoon (Soft)|
|Brown sugar||1⁄2 Cup (8 tbs) (Firmly Packed)|
|Whole egg||1 , beaten|
|Orange extract||1⁄2 Teaspoon|
|Ground cardamom||1⁄2 Teaspoon|
|Flour||1 3⁄4 Cup (28 tbs), unsifted|
|Baking powder||2 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
|Zucchini||1 Cup (16 tbs), diced 0.25 inch cube|
Cream margarine and sugar; add egg and orange extract; beat well.
Mix together dry ingredients; add to creamed mixture alternately with milk.
Stir in zucchini.
Spoon into oiled custard cups or individual steam pudding molds.
Cover; steam 1 hour for large pudding, or 45 minutes for small ones.
