Stewed Kumquats And Prunes
|Prunes||1 Cup (16 tbs)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Unpeeled kumquats||6 , sliced|
Cover prunes with cold water and soak overnight.
Simmer in the same water until tender and plump.
Remove prunes from juice and pit.
In a saucepan, combine honey, 1/2 cup of the cooking juice from prunes, orange juice, and the kumquats.
Simmer about 5 minutes, then add prunes.
Toss to combine fruits.
