Uova Con Prosciutto's picture
Adapted from Singing Chef Pasquale Cookery Show on PBS Canada.
  Hard boiled eggs 6 , peeled
  Onion 2 Tablespoon, minced
  Prosciutto 1 Ounce, chopped
  Mayonnaise 4 Tablespoon
  Capers 2 Tablespoon, chopped
  Tarragon 1 Pinch
  Salt 1⁄2 Teaspoon
  Pepper 1 Pinch
  Paprika 1⁄2 Teaspoon

Slice eggs in half lengthwise and place yolks in a bowl.
Mash yolks and add all the other ingredients except paprika.
Fill whites with this mixture and sprinkle with paprika.
