Piselli Al Prosciutto
|Onions||1 Ounce, chopped|
|Fresh shelled green peas||3⁄4 Pound|
|Chicken stock||3 Tablespoon|
|Prosciutto||2 Ounce, cut in 1 1/4-inch julienne strips|
|Black pepper||To Taste, ground|
1. In a small saucepan, melt butter over a moderate heat and cook the onions for 7 to 8 minutes, stirring frequently until they are soft but not brown.
2. Add green peas and chicken stock, cover, and cook for 15 to 20 minutes, until peas are tender. Add the strips of prosciutto and cook, uncovered, stirring frequently, for about 2 minutes more, until all the liquid is absorbed.
3. Season well.
4. Serve the peas in a heated bowl.
