Pasta With Basil And Prosciutto
|Olive oil||3 Tablespoon|
|Garlic||2 Clove (10 gm), minced|
|Freshly grated parmesan cheese||1 Cup (16 tbs)|
|Heavy cream||1 Cup (16 tbs)|
|Chopped fresh basil||1⁄4 Cup (4 tbs)|
|Ripe tomatoes||3 , peeled, seeded, and chopped|
|Prosciutto||1⁄4 Pound, diced|
|Angel hair pasta||1 Pound|
Heat the olive oil in a large saucepan over moderately high heat.
Add the garlic and stir until softened, about 1 minute.
In a small bowl, whisk 3/4 cup of the cheese with the cream.
Add to the saucepan, lower the heat to moderate, and simmer until the mixture has thickened slightly, about 5 minutes.
Add the basil, tomatoes, and prosciutto.
Continue cooking over moderate heat until the tomatoes have softened, about 5 minutes.
Meanwhile, bring a large pot of salted water to a boil, and cook the pasta according to package directions.
Drain and rinse the pasta under cool water, and return it to the pot.
Add the sauce, and simmer until the pasta is heated through, 2 to 3 minutes.
Arrange on serving plates and sprinkle with the remaining cheese.
Serve at once.
