Old Country Soft Pretzel Sticks
|Dry yeast||1 Tablespoon|
|Lukewarm water||1 1⁄4 Cup (20 tbs)|
|Rye flour||4 Cup (64 tbs)|
|Rye flour||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten with 1/2 teaspoon water|
Soften yeast in lukewarm water.
Add honey and set mixture aside for 5 minutes.
Combine 4 cups rye flour with salt.
Stir in yeast mixture.
Turn dough onto lightly floured board and knead with 1/2 cup rye flour until smooth.
Divide dough into 48 pieces and roll each into a rope about 1/2 inch in diameter and 5 inches long.
Place on a buttered baking sheet.
Brush with egg and water glaze and sprinkle with onion.
Let rise for 20 to 30 minutes.
Preheat oven to 425°F and bake for 15 to 20 minutes.
Cool on rack.
