Cooking Chicken and Langoustine Risotto
This wonderful video shows life as it is in Marina (near Trogir) along the Dalmatian Coast of Croatia. Seafood is wonderful here! Steve and I love all things about Dalmatia the people, the cuisine, and the beauty of the sea, and of course the amazing food and drink! We spent amonth there 5 years ago and are planning to have a holiday there in May/June this year. Mainly we will wander Montenegro which is about 3 hours south of Trogir and Marina, 1 hour south of Dubrovnik. This entire coast is amazing-WE LOVE IT!
Here Gule is making a longastino, chicken and spec (smoked lean bacon) risotto plus garlic, parsley, olive oil and a little salt and pepper, some butter at the end. You can add water or broth and as is the method must stir and stir the risotto. The large in the shell longostino gives the broth a wonderful seafood flavour.
Cooking this way outside is traditional in the Balkans and everyone shares with each other-it is a wonderful way of life. There is always music everywhere!
Gule and Ivica decided to have a little party one Sunday afternoon last summer. They prepared a delicious risotto with chicken and langoustines in the courtyard behind the kiosk while we all enjoyed our neighbors’ company with music and a few beers. The recipe was Ivica’s but Gule did most of the work. Once the steaming heap of PERFECT risotto was ready and placed lovingly in the alley, Jakov set up a “DJ booth” on his balcony and played classic American pop and soul 45’s from the only record player in the village. Neighbors who crept out of their houses into the alley to see what was happening were answered with a plate of risotto, a beer and a lot of smiles.
