Dijon Prawns

Ingredients
  Oil 60 Milliliter
  All purpose flour 60 Milliliter
  Spanish onion 1 , finely diced
  Green bell peppers 2 , finely diced
  Celery stalks 3 , finely diced
  Peeled seeded chopped tomatoes 500 Milliliter
  Salt 10 Milliliter
  Oregano leaves 5 Milliliter
  Thyme leaves 5 Milliliter
  Basil leaves 5 Milliliter
  Stone ground dijon mustard 30 Milliliter (Prepared)
  Fish broth/Chicken broth 375 Milliliter
  Brown sugar 15 Milliliter
  Peeled deveined tiger shrimp 675 Gram (Prawns)
  Chopped green onion 60 Milliliter
  Chopped parsley 45 Milliliter
Directions

Heat the oil in a large pan or Dutch oven.
Add the flour, reduce the heat and cook into a light brown roux (paste).
Add the onions, peppers and celery, saute until tender, stirring constantly.
Add the tomatoes, seasonings, mustard, broth and sugar.
Simmer, covered for 20 minutes.
Add the prawns and continue to simmer uncovered for 10 minutes.
Stir in the green onion and parsley and serve at once over cooked rice.
