Whiting Stuffed With Prawns
|Lemon||1 , juiced|
|Whiting||6 Medium, boned and cleaned|
|Black pepper||To Taste|
|Butter||4 Ounce (125 Gram)|
|Button mushrooms||10 Ounce, sliced (300 Gram)|
|Prawns||10 Ounce, deveined (300 Gram, Shelled Weight)|
|Parsley||6 Tablespoon, freshly chopped|
Sprinkle the lemon juice over the fish, then rub inside and out with salt and pepper.
Melt 25g/1 oz of the butter in a frying pan.
Add the mushrooms with salt and pepper to taste and fry for 2 to 3 minutes.
Stir in the prawns and parsley and cook for 2 to 3 minutes longer.
Remove from the heat.
Stuff the cavities in the whiting with the mushroom mixture.
Cut half the remaining butter into small pieces and dot over the bottom of a baking dish.
Place the whiting in the dish, side by side, and dot with the remaining butter.
Bake in a moderate oven (180°C/350°F or Gas Mark 4) for 20 to 30 minutes or until the fish is cooked.
Test with a fork: the flesh should flake easily.
