Potted Prawns Or Shrimps
|Prawns||1 Quart (Shrimps, Fresh)|
|Fresh butter||1⁄4 Pound|
|Ground nutmeg||1⁄8 Teaspoon|
|Salt||1 Teaspoon (Leveled)|
|Clarified butter||1 Tablespoon|
The fish should be perfectly fresh and as large as possible.
Boil, then shell and divide them slightly.
Pound to a paste with the butter and seasoning.
Rub through a fine sieve, press into small pots, cover with clarified butter, and when cold tie down closely.
