Plantation Coffee Pralines

Ingredients
  Sugar 2 Cup (32 tbs)
  Buttermilk 1 Cup (16 tbs)
  Water 1⁄4 Cup (4 tbs)
  Instant coffee powder 1 Tablespoon
  Baking soda 1 Teaspoon
  Salt 1⁄8 Teaspoon
  Pecans 2 Cup (32 tbs), chopped
  Butter 2 Tablespoon, softened (or margarine)
  Vanilla extract 2 Teaspoon
Directions

Combine first 6 ingredients in a large Dutch oven, bring to a boil, stirring constantly.
Cook over medium heat, stirring constantly, until mixture reaches soft ball stage (236°).
Remove from heat, and stir in remaining ingredients.
Beat vigorously with a wooden spoon until mixture just begins to thicken.
Working rapidly, drop by rounded tablespoonfuls onto greased waxed paper, let cool.
