Plantation Coffee Pralines
|Sugar||2 Cup (32 tbs)|
|Buttermilk||1 Cup (16 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Instant coffee powder||1 Tablespoon|
|Baking soda||1 Teaspoon|
|Pecans||2 Cup (32 tbs), chopped|
|Butter||2 Tablespoon, softened (or margarine)|
|Vanilla extract||2 Teaspoon|
Combine first 6 ingredients in a large Dutch oven, bring to a boil, stirring constantly.
Cook over medium heat, stirring constantly, until mixture reaches soft ball stage (236Â°).
Remove from heat, and stir in remaining ingredients.
Beat vigorously with a wooden spoon until mixture just begins to thicken.
Working rapidly, drop by rounded tablespoonfuls onto greased waxed paper, let cool.
