Praline Filled Peaches With Fresh Plum Cordis

Ingredients
  Ripe peaches 8
  Lime 1 , juiced
  Cream 300 Milliliter, stiffly whipped
  Praline 1⁄2 Cup (8 tbs)
  Sugar 4 Tablespoon
  Unpeeled almonds 4 Tablespoon
  Plum coulis 2 Tablespoon
  Fresh plums 500 Gram
  Sugar 100 Gram
  Cloves 2
  Salt 1 Pinch
  Lime 1⁄2 , juiced
Directions

GETTING READY
1) Prepare praline using the sugar and almonds and set aside.
2) Remove stones from plums and discard.
3) Combine all ingredients for coulis and puree coarsely.
4) Keep the puree to chill.
5) Blanch peaches and peel.
6) Cut peaches in halves.
7) Remove the stones from pears and dircard the stones.
8) Sprinkle peaches with lime juice to avoid discolouration.

MAKING
9) Combine praline with whipped cream and fill into peach halves.
10) Pour a spoonful of plum coulis in the centre of a quarter plate.
11) Place 2 peach halves on top.
12) Drizzle some coulis over praline-cream.

SERVING
13) Serve the dish chilled.
