Praline Filled Peaches With Fresh Plum Coulis

Ingredients
  Ripe peaches 8 Large
  Lime juice 1 Tablespoon (Juice Of 1 Lime)
  Cream 300 Milliliter, stiffly whipped
  Praline 6
  Sugar 4 Tablespoon
  Unpeeled almonds 4 Tablespoon
  Plum coulis 1 Tablespoon (Fresh)
  Fresh plums 500 Gram
  Sugar 100 Gram
  Cloves 2
  Salt 1 Pinch
  Lime juice 1⁄2 Teaspoon
Directions

GETTING READY
1. Prepare praline by caramelizing the sugar and adding almonds.
2. Pour over a greased surface and allow to harden before crushing. Set aside.
3. Stones plums.
4. Mix all ingredients for coulis in a blender and puree.
5. Chill in the refrigerator until ready to serve.

MAKING
6. Blanch peaches in boiling water and peel off skins.
7. Halve the peaches, remove stones and place in a bowl.
8. Sprinkle lime juice over the peaches to prevent them from browning.
9 Fold the praline into the whipped cream
10. Spoon this fill into the peach halves and chill.

SERVING
11. Pour a spoonful of plum coulis in the centre of each dessert plate.
12. Arrange 2 peach halves on the top.
13. Drizzle some coulis over praline-cream.
14. Serve chilled.
