Buttermilk Pralines

Ingredients
  Sugar 2 1⁄2 Cup (40 tbs)
  Buttermilk 1 Cup (16 tbs)
  Baking soda 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Butter 1⁄4 Cup (4 tbs)
  Vanilla 1 Teaspoon
  Pecan halves 2 Cup (32 tbs)
Directions

Butter a heavy 4-quart saucepan.
In pan combine sugar, buttermilk, baking soda, and salt.
Bring mixture to boiling over medium heat, stirring constantly .
Reduce heat.
Cook and stir to soft-ball stage or till candy thermometer registers 234°, 10 to 15 minutes.
Remove from heat.
Add butter and vanilla.
Do not stir.
Cool about 5 minutes.
Beat till mixture is smooth and slightly thickened, 2 to 3 minutes.
Stir in pecan halves.
Immediately drop from a tablespoon onto waxed paper.
If mixture becomes too thick to drop, stir in a teaspoon or two of water.
Cool.
