|Sugar||3 Cup (48 tbs)|
|Buttermilk||1 Cup (16 tbs)|
|Baking soda||1 Teaspoon|
|Light corn syrup||1⁄2 Cup (8 tbs)|
|Pecans||3 Cup (48 tbs), chopped|
Combine sugar, buttermilk, baking soda and corn syrup in a large saucepan.
Bring to a soft-ball stage (234° to 238°).
Just before removing from heat, add pecans.
Remove from heat; add butter and vanilla.
Beat until mixture loses its gloss and holds its shape (or mix by hand with a wooden spoon).
Drop on wax paper in mounds.
