Cut meat off breastbones, pull off skin, and remove sinews.
Cut meat into equal sized slices, counting two for one portion.
Flatten them until they are thin.
Salt, turn slices in flour, beaten egg, and bread crumbs, and fry in ample fat, until they are golden brown.
