  Chopped turkey 2 Cup (32 tbs)
  Grapes 1⁄2 Cup (8 tbs)
  Celery 1⁄2 Cup (8 tbs), sliced
  Almonds 4 Tablespoon
  Lemon juice 1 Teaspoon
  Orange rind 1 Teaspoon, grated
  Mayonnaise 1 Cup (16 tbs)
  Lettuce leaves/Endive leaves 4

Chop turkey into medium-size pieces.
Dip grapes into boiling, then cold, water; peel.
Slice celery.
Dip almonds in boiling water; remove skins.
Brown halved nuts in moderate oven 2 minutes.
Add lemon juice and orange rind to mayonnaise.
Mix turkey and other ingredients into mayonnaise.
Arrange on lettuce.
