With fork beat together 6 eggs; 1/4 cup skim milk; 1/2 teaspoon salt; 1/4 teaspoon dried oregano leaves, prushed;1/4 teaspoon dried parsley flakes; and dash pepper.
Pour into warm non stick skillet.
Cook over low heat; with spatula lift mixture from bottom of pan.
When half done, fold in one 8-ounce can tomatoes, drained and cut up.
Serve immediately.
