Rock Cornish Hens

Ingredients
  Rock cornish hens 4
  Fresh lemon juice 1⁄3 Cup (5.33 tbs)
  Butter/Margarine 1⁄4 Pound
Directions

Have butcher split the frozen hens. Remove plastic wrap, and rub each half with lemon juice. Let stand in refrigerator about half an hour; remove, and dip each half in melted butter. Place hens on broiler rack, skin side down, and broil until golden. Turn hens, and broil skin side until golden. Place hens on stuffing in a shallow roasting pan, skin side up. Cover pan tightly with foil; bake one hour, or until hens are tender. Stuffing: Use any favorite recipe, or a packaged product, prepared as directed. Or use this delicious Apple-Rice Stuffing:
