Pigeons In Parcels

Ingredients
  Pigeons 2 Large
  Butter 4 Ounce
  Bacon rashers 2
  Goose liver pate/Duck liver pate 1 Can (10 oz)
  Mushrooms 4 Ounce
  Chopped mixed herbs 1 Tablespoon (Parsley, Marjoram and Tarragon)
  Mace 1 Pinch
  Sherry 1 Tablespoon
Directions

GETTING READY
1) Using s sharp knife, cut the pigeon into half

MAKING
2) Melt 3 tablespoons of butter and brown the pigeon in a frying pan
3) Tip in the bacon rashers
4) Cover with a lid and roast in the oven for 20 minutes
5) Combine the liver pate with the chopped onion, 2 ounces butter, chopped herbs., mace and the sherry
6) Cut 4 large squares of foil
7) Place 18 of the stuffing in the centre of each foil
8) Place the halved pigeon a top
9) Fold the foil to cover the pigeon
10) Seal and crimp the edges
11) Bake in the oven at 400 F for 35 minutes

SERVING
12)Serve each parcel a person
