Cornish Hens with Apple and Orange Stuffing
|Cornish hens||1 Pound, thawed (8 Hens)|
|Cooking apple||1 , chopped|
|Herb seasoned stuffing||8 Ounce (1 Package)|
|Minced celery||1⁄2 Cup (8 tbs)|
|Grated orange peel||1 Tablespoon|
|Seasoned salt||To Taste|
|Seasoned pepper||To Taste|
About 1 3/4 hours before serving: Preheat oven to 400°F.
Season hens inside and out with seasoned salt and pepper.
In medium bowl, melt 2 tablespoons butter in 1 cup hot water; add apple, stuffing, celery and orange peel.
Use to stuff birds.
Place birds, breast side up, on rack in roasting pan; brush with melted butter.
Roast, uncovered, basting occasionally with melted butter, 1 hour 15 minutes or until drumsticks move easily up and down.
