Oven Barbecued Broilers
|Broilers||3 Pound (2 Whole, 1 1/2 Pound Each)|
|Barbecue sauce||1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)|
Follow this method when you are preparing several broilers at one time.
Have broilers quartered and necks and backbones removed.
Use backbones, necks and giblets for making chicken broth.
Wash and dry the broilers.
Lay bacon slices in a large baking pan, and top with broilers, which have been sprinkled with salt and pepper and brushed on both sides with Barbecue Sauce.
Bake, uncovered, in moderately hot oven of 400°F for 1 hr., or until tender and well browned, basting frequently with Barbecue Sauce.
Serve with additional Barbecue Sauce, and garnish with bacon slices.
