Turkey Stuffing Soup

Ingredients
  Butter 4 Tablespoon
  Red onion 1 Large, chopped
  Carrots 3 , thinly sliced
  Celery stalks 3 , sliced
  Tomatoes 2 Large, peeled and chopped
  Chopped cooked turkey 4 Cup (64 tbs)
  Parsley sprigs 3 , minced
  Turkey stock/Beef stock 1 1⁄2 Quart
  Leftover turkey stuffing 2 Cup (32 tbs)
Directions

In a stockpot over low heat melt butter.
Sauté onion, carrots and celery until tender.
Stir in tomatoes, turkey and parsley.
Add stock and stuffing.
Bring soup to a boil-reduce heat and simmer, partially covered, for 1 hour.
