Turkey Stuffing Soup
|Red onion||1 Large, chopped|
|Carrots||3 , thinly sliced|
|Celery stalks||3 , sliced|
|Tomatoes||2 Large, peeled and chopped|
|Chopped cooked turkey||4 Cup (64 tbs)|
|Parsley sprigs||3 , minced|
|Turkey stock/Beef stock||1 1⁄2 Quart|
|Leftover turkey stuffing||2 Cup (32 tbs)|
In a stockpot over low heat melt butter.
Sauté onion, carrots and celery until tender.
Stir in tomatoes, turkey and parsley.
Add stock and stuffing.
Bring soup to a boil-reduce heat and simmer, partially covered, for 1 hour.
