Au Gratin Potato Ramekins

Ingredients
  Butter/Margarine 2 Tablespoon
  Russet potatoes 4 , peeled and cubed
  Instant minced onion 4 Teaspoon
  Salt 2 Teaspoon
  Firm butter/Margarine 4 Tablespoon, cut into pieces
  Whipping cream/Half and half 1⁄2 Pint
  Shredded swiss cheese 1 Cup (16 tbs)
Directions

Generously butter four 10 ounce ramekins or custard cups.
Arrange potato cubes in ramekins.
Sprinkle each with 1 teaspoon of the onion and 1/2 teaspoon of the salt.
Evenly dot ramekins with butter pieces.
Pour 1/4 cup of the cream over each ramekin, then sprinkle each with 1/4 cup of the cheese.
Cover each ramekin with pleated plastic wrap.
Arrange in a circle on a flat 12 inch plate.
Microwave on HIGH (100%) for 10 minutes, rotating plate 1/4 turn after 5 minutes.
Starting at far edge of one ramekin, carefully fold back plastic wrap.
Potatoes should be fork tender.
If undercooked, microwave on HIGH (100%) for 1 to 2 more minutes or until fork tender.
Let stand, covered, for 5 minutes.
