Unforgettable Mashed Potatoes
|Red potatoes||5 , peeled and cubed|
|Russet potatoes||5 , peeled and cubed|
|Onion||1 Small, finely chopped|
|Butter||1⁄4 Cup (4 tbs) (About .5 Stick)|
|Cream cheese||6 Ounce, softened|
|Sour cream||1 Cup (16 tbs)|
Place enough salted water to cover the potatoes in a large kettle.
Bring to a boil.
Boil the potatoes for 15 minutes or until tender but still firm; drain.
Saute the onion in the butter for 5 minutes or until tender-crisp.
Combine the potatoes, onion mixture, cream cheese, sour cream, horseradish, salt and pepper in a large mixing bowl.
Mash with a potato masher, then beat with an electric mixer at medium speed for 1 to 2 minutes.
