Zesty Seasoned Potatoes
|Baking potatoes||2 Large|
|Canola oil||1 Tablespoon|
|Dijon mustard||1 Tablespoon|
|Seasoned salt||1 Tablespoon|
|Shredded parmesan cheese||1 Tablespoon|
Scrub the potatoes and slice in rounds, leaving on the skin if you like.
Soak in ice water for 15 minutes; drain.
Combine the canola oil, Dijon mustard, seasoned salt and Parmesan cheese in a baking dish; mix well.
Stir in the potatoes; marinate for 30 minutes.
Arrange the marinated potatoes on wire racks placed on baking sheets.
Bake at 400 degrees for 20 minutes.
