|Potatoes||4 Large, pared and cut into 0.5 inch cubes (About 4 Cups)|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted|
|Grated lemon peel||1 Teaspoon|
|Coarsely ground pepper||1⁄4 Teaspoon|
|Lemon juice||3 Tablespoon|
|Green onion with tops||1 , chopped|
Cook potato in 1 inch boiling salted water (1/2 teaspoon salt to 1 cup water) in tightly covered saucepan just until tender; drain.
Mix remaining ingredients; toss with potato.
Spoon on 20x14 inch piece of double thickness heavy-duty aluminum foil.
Wrap potato securely in the foil.
(To serve immediately, let stand at room temperature 1 hour.
Bake in 350Â° oven 20 minutes.) Refrigerate.
