Mashed Potatoes

Ingredients
  Potatoes 4 Large, peeled and quartered
  Skim milk/Evaporated skim milk 1⁄2 Cup (8 tbs)
  Black pepper 1⁄4 Teaspoon
  Butter substitute 1 Tablespoon (natural) (Optional)
  Ground nutmeg To Taste (Optional)
Directions

1. Place potatoes in a large, heavy pot. Cover with water. Boil, covered, for 20 minutes or until tender.
2. Drain potatoes and mash with a potato masher or large fork.
3. Beat milk in with a wire whisk.
4. Sprinkle with pepper, and natural butter substitute and nutmeg, if desired.
Variation â– Substitute 1/2 cup nonfat buttermilk for the skim milk.
