Skillet Potato Medley
|Onion||1 Large, chopped|
|Chopped celery||1 Cup (16 tbs)|
|Vegetable oil||3 Tablespoon|
|Frozen french fried potatoes||2 Pound|
|Canned stewed tomatoes||1 Pound|
|Chopped parsley||1 Tablespoon|
Saute onion and celery in vegetable oil until soft in a large frying pan.
Stir in frozen potatoes; sprinkle salt and pepper over top.
Cook slowly, stirring several times, until potatoes are golden.
Pour tomatoes and juice over potato mixture; stir lightly; cover.
Heat slowly, stirring once or twice, until almost all liquid is absorbed.
Spoon into a heated serving bowl; sprinkle with chopped parsley.
Serve with broiled hamburger patties or steak.
