|Grated lemon rind||2 Teaspoon|
|Lemon juice||1 Tablespoon|
|Lemon slices||3 (For Garnishing)|
Peel a 1/2-inch strip around the center of each potato.
Melt butter in a skillet, add lemon rind, lemon juice, and potatoes, stirring gently.
Cover and cook over low heat 35 to 40 minutes or until tender, stirring occasionally.
Sprinkle with salt and pepper.
Transfer to a serving bowl, garnish with lemon.
