Potato Vegetable Saute
|Vegetable oil||2 Teaspoon|
|Diced onion||2 Tablespoon|
|Garlic||1⁄2 Clove (2.5 gm), minced|
|Cooked potatoes||6 Ounce, peeled and cut into cubes|
|Cubed green bell peppers||1⁄2 Cup (8 tbs) (Around 0.5 Inch Cubes)|
|Cubed red bell peppers||1⁄2 Cup (8 tbs) (Around 0.5 Inch Cubes)|
In 8- or 9-inch skillet heat oil; add onion and garlic and saute until onion is soft.
Add potatoes and bell peppers and saute, stirring, until potatoes are lightly browned and peppers are tender-crisp; stir in salt and pepper and saute for 2 minutes longer.
