Favorite Scalloped Potatoes

  Butter 1⁄4 Cup (4 tbs)
  Flour 2 Tablespoon
  Salt 2 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Nutmeg 1⁄8 Teaspoon
  Milk 4 1⁄2 Cup (72 tbs)
  Potatoes 9 Cup (144 tbs), coarsely grated
  Onion 1⁄4 Cup (4 tbs), finley grated
  Butter 3 Tablespoon

Heat oven to 325 degrees.
Butter a shallow baking dish, about 13 x 9 1/2 X 2 inches (shallow glass pan measuring 3 qt. is perfect).
Melt 1/4 cup butter in large saucepan.
Sprinkle in flour, salt, pepper and nutmeg and let bubble up.
Remove from heat, add milk all at once and stir to blend.
Return to moderate heat and cook, stirring constantly, until boiling, slightly thickened and smooth.
Add potatoes and onion and blend lightly.
Pour into prepared baking dish.
Dot with 3 tbsp. butter.
Bake 1 1/2 to 2 hours or until potatoes are very tender and top is brown and crusty.
