This is an amazing 10-minute recipe that you could make in your dorm room or home using just your microwave
Sweet potato | 1 Medium | |
Black beans | 1 Tablespoon | |
Corn and black bean salsa | 2 Tablespoon | |
Chopped tomatoes | 1 Tablespoon | |
Non | fat greek yogurt/Sour cream |
GETTING READY
1. Wash the sweet potato and pierce it a few times using a fork.
MAKING
2. Place the pierced sweet potato in the microwave oven for about 8 - 12 minutes. (Microwaving time depends on the size of the sweet potato)
3. Meanwhile in a bowl, combine together the black beans, corn and black bean salsa and chopped tomatoes.
4. Once the sweet potato is done cooking, place the bowl with the salsa mixture in the microwave oven for 30 seconds.
5. Slice the cooked sweet potato down the middle and squeeze open, by pinching the ends together.
6. Then, spoon the salsa mixture inside the sweet potato and top it with some greek yogurt or sour cream.
SERVING
7. Serve and enjoy!
TIPS
If you do not have the already made salsa, you can add cumin, coriander and olive oil to flavor it.
