Consomme Scalloped Potatoes
|Canned consomme||10 Ounce|
|Water||3⁄4 Cup (12 tbs)|
|Salt and pepper||To Taste|
Peel potatoes, slice, and parboil 5 minutes in the consomme and water.
(This lets the consomme flavor get into the potatoes more than if they are baked without parboiling.) Drain, and save the liquid.
Place potatoes in a buttered casserole in layers, sprinkling flour, salt and freshly ground black pepper on each layer.
Pour the consomme back over the potatoes, and dot with butter.
Bake at 375Ã‚Â°F. 45 minutes.
