Peel and slice 1 1/2 lb.
of potatoes, put them in layers into an upright mould, seasoning each layer with pepper and salt.
Leave to steep for 30 minutes.
Now press to extract the natural moisture from the potatoes.
Then pour over this mixture 6 tablespoonfuls of melted butter, fat, or bacon fat.
Bake in a moderate oven for 40 minutes.
Turn out of the mould, and serve very hot, with mixed herbs, seasoning, or any variety of sauce you want.
