1.Make tiny little holes in the potatoes with a fork and microwave them till the time they are done.
2.Add lemon juice and scallions to the greek youghurt. Mix well.Keep it aside.
3.Once the potatoes are done cut them open and stuff it with cheese,onions,scallions,broccoli,mushrooms ,ham ,basil and finally top it up with greek yougurt.
4.Serve on a plate with herbs on top.
You can chill the Greek yogurt before using it.
Leftover vegetables can also be used as stuffing.
