Snow Capped Potatoes
|New potatoes||8 Medium|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Chopped green onions||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Teaspoon|
Cook potatoes in boiling water 30 minutes or until tender; drain and cool.
Peel potatoes and mash.
Stir in next 4 ingredients.
Beat egg yolks until thick and lemon colored; gradually stir into potato mixture.
Drop mixture by spoonfuls in 3-inch round mounds onto a lightly greased cookie sheet, or pipe mixture using a decorator tube and tip.
Beat egg whites (at room temperature) until stiff but not dry; fold in mayonnaise and lemon juice.
Frost each potato mound with meringue mixture: Bake at 350Â° for 15 to 18 minutes or until lightly browned.
