Oven-Steamed Potatoes

Peel some large potatoes.
Then cut them up, with a special knife for the purpose, into small pieces either globular or olive-shaped.
Otherwise slice them.
Put them in boiling salted water.
Boil for 5 minutes then take out and drain.
Put into a fireproof dish, and cover with boiling water in which a little butter has been melted 2 tablespoonfuls of butter to if pints of water.
Cover the dish with a lid and a piece of grease proof paper, bake for 15 to 20 minutes, then take the cover off, and allow the liquid to reduce entirely.
Serve with chopped parsley and lemon juice.
